I did a quick photo-shoot at my local butchers, Thornes in Wiveliscombe. The guys in there are fantastic - always really helpful and so it was a real pleasure spending some time with Dave breaking down some meat. This is the stuff that happens behind the scenes at a proper butchers - the animals arrive and are broken down into the joints, chops and mince that folk like me actually buy. There is a huge amount of skill involved and I loved learning about it whilst taking photos of Dave!
